Nestled in the picturesque hills of the Yarra Valley, Hermetica Distillery unveils a gin that embodies the rich spirit of the region. COCKTAIL EVERGREEN SOUR

Fresh pine adds a layer of crisp winter flavour to this sour, lifting the woodsy juniper notes. Lime juice brings some body and complexity to the sourness.

INGREDIENTS

  • 35ml Hermetica Gin
  • 20ml fresh lemon juice 20ml fresh lime juice
  • 35ml pine syrup*
  • 1 egg white
  • GARNISH Pine needles

METHOD

Put all ingredients into a cocktail shaker, without ice. Dry shake, then add a good handful of ice and shake again to emulsify. Double strain into a rocks glass filled with more ice or a chilled coupe glass, and garnish with the pine needles. Cheers!!
